Rolled hanger steak (inside skirt steak) with English bacon, rosemary and fermented pepper is a semi-finished meat product intended for quick home preparation in a pan or on the grill. Country of rearing: Czech Republic. Country of slaughter: Czech Republic.
Hanger steak is a flat muscle from the diaphragm with a pronounced beef flavour and juiciness; when seared it forms a firm crust while remaining tender inside. This mini roast is great with roasted potatoes, grilled vegetables or a pepper sauce.
Use
Cook whole. Let the meat come to room temperature first, then sear well on all sides and finish at a lower temperature (or in the oven at 100–120 °C) to medium rare or medium. After cooking, let it rest for at least 5 minutes and slice against the grain.
