- 200 g of red lentils
- 100 g of white onion
- 200 g of canned peeled chopped tomatoes
- 400 ml of canned coconut milk
- 700 ml of vegetable broth
- 120 g of sour cream
- 60 g of pumpkin seeds
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- 1 pinch of salt
- 1 pinch of pepper

Heat the olive oil in a pot and sauté the finely chopped onion until translucent. Add the cumin and let it release its aroma briefly. Then add the rinsed red lentils, add the peeled tomatoes, and pour in the vegetable broth and coconut milk.

Bring the mixture to a boil and simmer over low heat for about 20 minutes until the lentils are soft. Blend the soup until smooth, season with salt and pepper. Serve garnished with a dollop of sour cream and pumpkin seeds.
