  • 1 pc of onion
  • 2 cloves of garlic
  • 600 g of zucchini
  • 700 ml of vegetable stock
  • 200 g of feta cheese
For cooking and seasoning
  • 1 tbsp of clarified butter
  • 1 tbsp of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

Heat the clarified butter together with the olive oil in a pot. Add the finely chopped onion and minced garlic cloves and sauté over medium heat for about 6 minutes.

Wash the zucchini, slice it, and add it to the pot. Sauté for about 10 minutes, then pour in the vegetable stock. Cover the pot with a lid and simmer the soup for 10–15 minutes until the zucchini is completely soft.

Remove the soup from the heat, let it cool slightly, and blend with a hand blender. Season with salt and pepper and serve with coarsely crumbled feta.
