- 1 tbsp of clarified butter
- 1 onion
- 2 cloves of garlic
- 2 tbsp of sweet paprika
- 1 tsp of dried chilli
- 1 l of broth
- 300 g of oyster mushrooms
- 1 tsp of ground caraway seeds
- 1 tbsp of dried marjoram
- 1 pinch of salt
- 1 pinch of pepper
In a pot, sauté the finely chopped onion in clarified butter over low heat. Add one minced clove of garlic and fry for 2 minutes.
Sprinkle the onion and garlic with sweet paprika. Sauté, stirring constantly, for another maximum of 1 minute until the onion browns. Add the dried chilli to the pot and pour in the broth.
Cut the oyster mushrooms into strips and add them to the pot. Cover with a lid and cook for 10–15 minutes. Then season with caraway seeds, marjoram, salt, and pepper. Finally, press the remaining garlic clove into the soup, stir, and serve.
