Ingredients overview
- 130 g wholemeal sponge biscuits (gluten-free biscuits can be used)
- 20 g Dutch-process cocoa powder
- 50 g cane sugar
- 70 g butter (softened)
- 30 g honey
- 3 tbsp semi-skimmed milk
- 100 g cream cheese
- 1 tbsp vanilla extract
First, set aside 15–20 sponge biscuits. Place the rest of the biscuits in a blender along with the cocoa and cane sugar, and blend everything to a powder consistency. Place the blended mixture into a larger bowl and add the butter, 20 g of honey, and milk. Mix everything together and work into a stiff dough. Wrap the finished dough in cling film and place in the fridge for at least 1 hour.
After the specified time, mix the cream cheese, 10 g of honey, and vanilla extract in a smaller bowl. Remove the dough from the fridge and prepare the finished cream cheese filling and the remaining biscuits. Press the dough into beehive moulds, make a well in the dough using the narrow end of a wooden spoon, fill it with the filling, and cover with a biscuit. Then remove the beehives from the mould. Continue this way until you have used all the dough.
Let the beehives rest in a cool place for at least 24 hours. Store in the fridge, where they will keep for about 1 week.
Chef's tip
You can freeze the beehives and store them for 3–4 months.
