Preparation method

Ingredients overview

  • 500 g penne pasta
  • 800 g chopped canned tomatoes
  • 1 chili pepper
  • 100 g lean English bacon
  • 6 cloves garlic
  • 4 small shallots
  • 1 tablespoon olive oil
  • 1 handful fresh basil
  • Salt
  • Pepper
  • Chopped parsley
  • 100 g Parmesan-style cheese - optional

Cook the pasta according to package directions. Meanwhile, sauté the diced bacon in a pan. Add the chopped chili pepper, don't be shy with it. Then add the finely chopped shallot. Once the shallot is golden, add the sliced garlic.

Add the chopped tomatoes to the mixture, season with salt and pepper. Add a few basil leaves, cover with a lid, and let it reduce for about 5 - 7 minutes over low heat.

Once the pasta is cooked, mix it with the tomato mixture. Serve with chopped fresh parsley, and grated Parmesan cheese also goes great with it.
