- 180 g carrots
- stalk of spring onion
- 50 g all-purpose flour
- 2 eggs
- 2 cloves of garlic
- sprig of thyme
- salt
- pepper
- 150 g semi-fat quark
- handful of parsley
Peel and finely grate the carrots. Transfer them to a bowl and add finely chopped spring onion, pressed garlic clove, thyme leaves, eggs, and flour. Season with salt and pepper and mix everything into a compact, sticky dough.
Heat a pan with a sufficient amount of oil. Once hot, add fritters formed from the dough. Fry them on both sides until golden brown and fully cooked, then transfer them to a plate lined with a paper towel to absorb excess oil.
Finally, prepare the dip. Mix the quark with pressed garlic and finely chopped parsley. Season with salt and mix everything. Serve the fritters with the quark dip.
