- 200 g of pre-cooked chickpeas
- 100 g of pre-cooked beetroot
- 2 tablespoons of olive oil
- 1 clove of garlic
- 1 tablespoon of nutritional yeast
- 4 sheets of whole wheat tortilla
- 100 g of cucumber
- 100 g of carrot
- 100 g of sugar snap peas
- 1 handful of iceberg lettuce
- 1 pinch of salt
- 1 pinch of pepper
When preparing the hummus, first blend the chickpeas together with the beetroot, olive oil, garlic, nutritional yeast, and 4 tablespoons of water until smooth. Season the hummus with salt and pepper.
Spread the tortillas on the kitchen counter and spread each sheet evenly with the prepared hummus (do not spread the hummus all the way to the edges so it does not leak when wrapping). Cut the cucumber and carrot into thin strips. Place the peas and some of the carrot, cucumber, and iceberg lettuce in the middle of each tortilla.
Wrap the tortillas and serve or store in the fridge.
