Preheat the oven to 185 °C.

Bring 800 ml of salted water to a boil in a large pot. Gradually stir in the polenta. Keep the polenta over medium heat and stir constantly until it thickens and reaches a typical porridge-like consistency. The polenta is cooked after 2-5 minutes.

After this time, remove the pot with polenta from the heat and stir in the clarified butter, thyme, and 200 g of grated mozzarella. Set the prepared polenta aside for now.
