- 1 kg type C potatoes
- 250 g apples
- 350 g white sauerkraut
- 6 pcs of eggs
- 250 g fine whole grain spelt flour
- 3 tablespoons of olive oil
Mix the grated potatoes with the apples and sauerkraut. Squeeze the excess juice from the resulting mixture and drain it. Then mix the eggs and spelt flour into the mixture and work into a dough.
Now prepare a large pan and heat the olive oil in it. Shape the prepared dough directly in the pan into pancakes about 8 cm in diameter and fry them over low heat for 3 minutes on one side and 2 minutes on the other side until crispy. The dough should make approximately 25 potato pancakes.
