Ingredients overview

  • 2 tablespoons sunflower oil
  • 500 g ground beef (8% fat)
  • 2 medium yellow onions (diced)
  • 4 cloves garlic (roughly chopped)
  • 2 teaspoons taco seasoning
  • Canned chopped tomatoes (2× 400 g)
  • 120 g grated cheddar (can be substituted with Gouda)
  • 200 g cooking cream (12% fat)
  • 120 g sour cream (12% fat)
  • 2 spring onions (sliced)

In a large pot, heat the oil and brown the meat over high heat (approx. 5–8 minutes). Transfer the meat to a bowl, return the pot to the stove, and sauté the onion over medium heat for 7–8 minutes (or until translucent). Then add garlic and taco seasoning, sauté for another 1–2 minutes, and then pour in the tomatoes. Pour water into the empty cans and add it to the pot. Repeat this twice (i.e., 4 cans of water).

Then add the browned meat to the pot and cook for 8–10 minutes over medium heat. Subsequently, add the pasta and cook for 5–8 minutes (or according to package instructions). Once the pasta is cooked, stir in the cheddar and wait for it to melt (1–2 minutes). Then add cooking cream to soften and cook through (2–3 minutes).

Serve the finished taco pasta seasoned with a spoonful of sour cream and garnished with spring onion.
